The myth, the glamour, the values, and the culture of Thessaloniki’s street food: From the refugee bougatsa of 1922, elevated to a modern, popular gourmet breakfast by the artisan Filippos Bandis, to the postmodern bougatsan of Estrella, which Kostas Kapetanakis and Chef Dimitris Koparanis made globally viral. From the piroski, perek, and khachapuri of Yiannis Kotzageridis to the Asian bao bun fillings of Chef Dimitris Pamporis, Thessaloniki has been, is, and will always be the queen not only of classic street food but also the innovative gastronomic city where all new street food trends began.
All of the above speakers, along with the legendary Dimitris Eikosidios, a master of souvlaki, will analyze the unique culture and values of street food.
Thanos Roumpis and Evygenia Evthimiadou of Thess_del_food capture the history of street food through images, words, sound, and viral videos.
The event will be presented and moderated by the specialized food journalist, Kostas Giantsios, from Biscotto.gr. The traditional rice pudding and nutritious salepi will be prepared by students from the La Chef Levi Higher School of Culinary Arts and Pastry, under the supervision of Professor Dimitris Kaisis.
