Mussel rice with dill

Mussels with rice is an excellent dish, that one can enjoy in all the restaurants and ouzeri of the town, pairing them with a nice white wine that gives its beautiful aromas.”


  • 1/2 cup mussels cleaned
  • 1/2 cup olive oil
  • 1 onion chopped
  • 4-5 spring onions chopped
  • 2 cups Carolina rice
  • 1/2 bunch dill chopped
  • 4 cups vegetable stock or water
  • salt, black pepper freshly grated


Clean well the shells of the mussels with a knife and wash them well. Wash the cleaned mussels and strain them.
In hot oil saute the onion and the rice. Add the cleaned mussels, the mussels with the shells and continue sauting. The shells that will not open are thrown away. Add the dill, salt, pepper, mix and pour in a deep non stick tray. Pour water and bake at 190⁰C in preheated oven for about 35 min.
